Olivier is everyone’s favorite salad; it is often prepared for the New Year and other holidays. But if you are on a diet, then it is better to refuse the classic Olivier, because you do not need extra pounds. But you can treat yourself and prepare this diet Olivier without potatoes. My detailed recipe with step-by-step photos will help you prepare it.

Ingredients:

- boiled sausage - 200 g;
- carrots - 1-2 pcs.;
- chicken eggs - 3 pcs.;
- pickled cucumbers - 100 g;
- canned peas - 1 jar;

For refueling:

Kefir - 50 ml;
- mustard - 1 tsp;
- salt - a pinch.

How to cook at home

We prepare all the ingredients for preparing the Olivier diet salad. Boil the carrots in advance. Wash it well and cook until tender without peeling it. Boil chicken eggs hard, then place them in a bowl of cold water. This will make them easier to clean.



Peel the carrots and cut into small cubes.



Peel the chicken eggs and cut them into cubes.





Cut the boiled sausage into small cubes. Instead of sausage, you can use ham in the diet Olivier.

Cut salted or pickled cucumbers into small cubes.



Place all the chopped salad ingredients in a bowl or pan.



Combine kefir with mustard and salt, mix well. The salad dressing is ready.





Add kefir-mustard dressing to the salad.



Open the canned peas, drain the liquid and add them to the Olivier salad with boiled sausage. Toss vegetables with dressing.



In order to present the salad beautifully, you will need a culinary ring, but if you don’t have one, make it yourself. Cut off the bottom of the tin can and wash well.

Place the salad in the ring and press down a little with a spoon, carefully remove the ring. If you can eat it, let the salad stand for a while in the ring, so it will hold its shape better.

True, in this form the salad is much more expensive, because the missing amount of ingredients has to be replaced with expensive sausage, peas and eggs. So, more expensive, but also tastier than the classic, the Olivier version is prepared from sausage, eggs, canned peas, carrots and onions.

There are no tricks in preparing this salad, but you need to select high-quality products and cut them into small, uniform, neat pieces.

For Olivier, take doctor's or milk sausage without fat, preferably from an above-average price category. The sausage should be in a bio-casing, pink-grayish on the cut, without shine.

Cut it into equal cubes slightly larger than canned peas.


It is also better to take homemade eggs - in addition to a more pronounced taste, they will also add brightness to the salad due to the rich color of the yolk. Of course, if there are no homemade eggs, factory-made eggs will do. The eggs must be hard-boiled; to do this, they must boil for at least 10 minutes.


Cut the boiled carrots in the same way as the sausage.


Try to chop the onion as finely as possible.


Carefully strain the water from the peas.


Mix all the ingredients, add a little salt and pepper to the salad, and add mayonnaise.


Stir the Olivier salad and let it brew for 2-3 hours in the refrigerator. During this time, the onions will be marinated in mayonnaise, and the tastes and aromas of the ingredients will be mixed into one “bouquet”.


How to replace traditional Olivier salad products
Since our goal is to make a dish that is not only tasty, but also safe for your figure, I recommend using the breast part of a skinless chicken carcass or turkey as a meat component. They contain a minimum of calories.
You can put potatoes at your discretion, but it is still better to replace them, for example, with celery.
Peas, without which it is impossible to imagine Olivier, are better to take fresh frozen - canned ones have more calories due to sugar.


Approximate calorie content of dietary Olivier
If our salad contains a minimum of potatoes, fat-free chicken (it needs to be cooked without the skin), and we do not season it with store-bought mayonnaise, but use low-fat yogurt, the calorie content of the holiday treat will be only 100 kcal per 100 g.

Diet Olivier: recipe with celery
This version of your favorite salad contains a green apple. It will give our dish a mysterious piquancy. And to prevent the healthy fruit from darkening, you can keep it in fresh lemon juice for about 10 minutes.
Ingredients
Chicken breast – 200 g;
Celery – 2 small stalks, peeled;
Eggs – 3 pcs.;
Carrot – 1 pc.;
Apple – 1 pc.;
Green peas (canned) – 100-150 g;
Large pickled cucumber – 1 pc.;
Lemon – ½ piece;

We wash the carrots and put them in a saucepan along with the eggs, pour in enough water to cover everything, and put them on the fire.
How to cook food for salad
Vegetables must be cooked covered, this way they will retain more useful elements.
You can make carrots (potatoes) soft in a slow cooker. To do this, pour 2-3 glasses of water into the unit, put vegetables and eggs (everything needs to be washed thoroughly before doing this!) in a container for steaming, turn on the timer for 20 minutes, and start it. When the time is up, open the lid and let the food cool.
Vegetable ingredients and meat should be chopped when they are still warm. Thanks to this trick, the taste of the dish will be more rich.
We cook the chicken separately. You can throw a couple of black peppercorns and a small onion into the broth - this will make the liquid more aromatic (the soup on it will turn out wonderful!), and the meat will smell pleasantly of spices.

In appearance, the salad is very similar to the classic version, but the taste is much better. Light, fresh, aromatic - and at the same time satisfying: not a salad, but a real masterpiece.

Product composition

  • 150 grams of boiled chicken fillet;
  • three hard-boiled chicken eggs;
  • one boiled carrot;
  • 150 grams of pickled or pickled cucumbers;
  • 150 grams of fresh cucumbers;
  • 200 grams of avocado;
  • one can of canned green peas;
  • half a head of onion.

For refueling

  • four tablespoons of thick kefir (adjust the fat content yourself);
  • half a teaspoon of mustard powder;
  • half a tablespoon of lemon juice;
  • one teaspoon of granulated sugar;
  • salt and ground white pepper - to taste.

Olivier salad without mayonnaise and potatoes: step-by-step preparation process

  1. Instead of potatoes, we will use avocado: it should be ripe, with cream-colored pulp. If you press on the avocado and your finger can push through the flesh a little, then the fruit is ripe. If you bought the fruit unripe, just leave it for a couple of days at room temperature.
  2. As you already understood from the recipe, a little preliminary preparation is required: boil chicken fillet, eggs and carrots in advance (preferably, of course, in the evening).
  3. Wash the chicken breast, put it in boiling water, add a little salt. Cook for about 20 minutes after boiling. With this method of cooking, the fillet turns out very tender and juicy. The most important thing is not to overcook the meat.
  4. Cut the cooled chicken meat into small cubes and place in a deep bowl.
  5. Chop the pickled or pickled cucumbers very finely and place them in a bowl with the meat.
  6. Advice. If the cucumbers are very juicy, squeeze out a little juice with your hands.
  7. Cool the boiled carrots until tender, peel them and also cut them into small cubes.
  8. You need to cut the hard-boiled eggs into the same pieces and place them in a salad bowl.
  9. Advice. For salads, you should always cut the food into the same size and shape: then it will not only be beautiful, but also tasty.
  10. Cut the avocado into two halves, remove the pit and the film from it. Cut the avocado right into the peel (inside) into small pieces and remove with a spoon. Pour lemon juice over it to prevent it from darkening and place in a salad bowl.
