A few years ago, I became seriously concerned about the issue of proper nutrition. I read a whole bunch of literature on this topic and gave myself some “educational education”, so to speak. As a result, I learned a lot of new things and gave up a number of foods in my daily diet (kept high-quality proteins and complex carbohydrates; removed “bad” fats, snacks and snacks such as sandwiches, and other “fast” carbohydrates). I revised my diet - reduced portions and increased meals (4-6 times a day, if possible).

Thus, slowly but surely, I lost 13 kg. To be honest, this result amazed me, and proper nutrition and a feeling of lightness have already become such a habit that I’m used to making all my meals (I mean everyday ones) as healthy as possible. Now my credo in the kitchen: cook tasty, healthy, and without complicating it. Of course, I also love complex dishes, holiday ones, and even those that are best prepared according to original recipes (for example, cakes, muffins, pies - but more often I bake them not for myself, but for loved ones :).

Today I propose to prepare dietary chocolate-orange muffins from flaxseed and oatmeal. I will say right away that the consistency of the cupcakes is moist inside and very tender, they even somewhat resemble pudding cupcakes (those made in a water bath).

Baking made from flax flour is rich in fiber, vegetable protein, polyunsaturated fatty acids, folic acid, vitamins B1, B2 and B6, antioxidants, potassium, magnesium, zinc. What’s especially nice is that the flour does not have a specific sharp taste (it is neutral), and in combination with cocoa powder and orange zest it’s just a bomb!

Flaxseed flour muffins: ingredients

  • crumbly cottage cheese – 150 g;
  • milk – 70 ml;
  • flaxseed flour – 1 tbsp. with a slide;
  • whole grain oat flour (*can be replaced with ground oatmeal*)– 1 tbsp. with a slide;
  • wheat bran (can be replaced with oat bran) – 3 tbsp;
  • egg – 1 pc;
  • medium apple – 1/2;
  • cocoa powder – 2 tbsp;
  • zest of one orange;
  • cane sugar/stevia/syrups – to taste (*I use ).

Flaxseed flour muffins: preparation

Turn on the oven to warm up (180 degrees).

Add milk to cottage cheese. Mix with a blender until smooth. Add flaxseed meal and stir again.

Peel half the apple, grate it, and add it to the dough. Grind everything thoroughly with a blender until pureed.

Add oatmeal, bran, egg. Stir the dough. Then add cocoa, sugar or to taste and grated orange zest.

After thoroughly mixing everything, place in molds (I have silicone ones; if you have others, don’t forget) and place in the oven for 40-45 minutes.

Mix a glass of milk with four tablespoons of flour, add egg white, a teaspoon of sugar and a little cinnamon.

Let the dough sit a little and fry in a dry frying pan.

They set quickly, the taste and color, of course, are very different from traditional pancakes, but don’t let that scare you, it turns out delicious.

The output is small, enough for a snack for two adults.

I like to serve with honey and low-calorie sour cream (I mix them) or maple syrup (not a diet option).

Oatmeal - flax cookies with nuts

Ingredients:

  • 1 cup butter
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 large egg
  • ½ cup plain flour
  • ½ cup flaxseed meal
