In fact, teriyaki is the name given to a Japanese method of frying using a sweet sauce that is widespread in traditional Japanese cuisine. Teriyaki sauce consists of a mixture of soy sauce with sugar, sake and/or mirin (sweet rice wine). The taste of the sauce is bright, unusual, salty and sweet at the same time, and rice with vegetables and other dishes prepared with it acquire the unique taste and aroma of traditional Japanese cuisine, special, elegant and loved all over the world.

We will need:

  • sushi rice - 170 g,
  • water - 195 ml,
  • onion - 1 piece,
  • carrots - 1 piece,
  • champignons - 300 g,
  • egg - 4 pcs,
  • soy sauce (dark or classic) - 3 tbsp.,
  • teriyaki sauce - 3 tbsp.,
  • vegetable oil for frying,
  • salt,
  • freshly ground black pepper,
  • green onions (optional).

How to cook rice with vegetables (step-by-step recipe with photos):

Place sushi rice in a small saucepan and rinse under cold water until the white residue disappears. Then add 195 ml of water to the rice and bring to a boil on the stove.

You need to cook rice correctly according to the following scheme: when the water boils, turn on the heat to maximum, cover the pan with a lid, then after exactly 1 minute, reduce the heat on the stove to the lowest possible, cook for 10 minutes. Do not open the lid of the pan and stir the rice. After the required 10 minutes have passed, turn off the heat (there is no need to remove the pan from the stove) and let the rice stand with the lid closed for another 10 minutes. This way it will not be overcooked and will turn out crumbly.

Break the eggs into a deep bowl and beat them a little with a pinch of salt with a whisk or fork until smooth.

Pour the egg mixture into a frying pan greased with vegetable oil and fry over low heat until cooked (do not stir).

Transfer the finished omelette from the frying pan to a cutting board and, after cooling slightly, cut it into small cubes.

Peel the onion and chop finely. Peel and grate the carrots (I used a grater for Korean carrots), wash the mushrooms and cut into small slices.

In a frying pan in heated vegetable oil, fry the onion for 1-2 minutes, then add the carrots, stir and fry for another 2 minutes.

New pizza recipe on the site, take note!

Add champignons to the onions and carrots, stir and fry until the juice from the mushrooms has completely evaporated. Add the cooked rice to the vegetables and mushrooms, stir, then add soy sauce and teriyaki sauce, mix well again.

After 2-3 minutes, add salt and freshly ground black pepper to taste to the rice with vegetables, then place the chopped omelette in the pan, stir and remove from heat.

The sauce under discussion is a thick dark syrup, more saturated in color than the usual soy sauce. Several centuries ago, the Japanese used charred bones of wild animals to prepare it. Today, preparing such a sauce is much easier.

It can be called a universal dressing for treats made from chicken, seafood, fish, any meat and even vegetables.

The additive is also used as a flavorful marinade. Its original sweetish-salty taste will make any dish more interesting.

    Classic recipe at home

There are a huge number of recipes for Japanese sauce. But the classic and simplest option is one made with soy sauce (140 ml). In addition to it, it is taken: small. a spoon of granulated garlic and vegetable oil, a tablespoon of ground ginger, potato starch, liquid bee honey, 6% wine vinegar, 70 ml of still water, 5 small. spoons of cane sugar. How to prepare teriyaki sauce from the listed ingredients is described step by step below.

    1. The main utensil for cooking the sauce will be a miniature saucepan. Soy sauce is poured into it, sand, oil, liquid honey, ginger, and garlic are added.
    2. After thorough mixing, vinegar and potato starch are added to the ingredients. It is better to sift it first so that there are no lumps in the sauce in the end.
    3. With the stove on medium heat, the mass is brought to a light boil, after which the heat is reduced, and the future sauce simmers quietly for another 6-7 minutes.

The cooled mixture is poured into a glass container for further storage.

    Sauce composition

Depending on the recipe chosen, the composition of the sauce may differ radically. Usually it is based on soy sauce, rice vodka, white wine, liquid honey, wine vinegar and other products in combination.

Additional ingredients can be used to improve the taste of the dish. For example, light or dark sesame seeds, orange juice, olive oil, fish sauce. Mirin, a sweet rice wine, gives the sauce a very interesting aftertaste. True, finding such a drink in an ordinary Russian supermarket will not be easy.

What ingredients can be replaced and with what?

In general, to prepare classic teriyaki, you usually take available products that do not require replacement. But in order to reduce the cost of the finished dish, you can use regular white sugar instead of cane sugar, which will require a smaller amount.

If granulated garlic is not at hand, it is also replaced with the usual fresh one. To do this, the cloves are passed through a garlic press.

What do you eat teriyaki sauce with?

Fresh teriyaki sauce can be poured over baked or grilled pieces of any fish. This will give the dish something new.

If you plan to fry pork in a frying pan in the near future, you should pour the sauce in question over the pieces and leave for a couple of hours. Teriyaki ingredients thus act on the meat fibers, which become more tender. Kebabs are also marinated in the discussed sauce.
